So Long Little Blog

Tomorrow is my 29th birthday. It marks the first day of the last year in my twenties. It's crazy to think that next year I'll be entering my thirties, but I honestly can't wait!  The twenties have been ridiculously good to me, but the thirties will bring so many memories and so many good times as we start our little family.  I started this blog as an experiment to chronicle my 28th year... and what a year it was!  A lot of change, a lot big moves and a lot of really exciting things happened this year.  As it comes to a close, so does this little blog.  I haven't been keeping up with it as much as I'd like, and I've kind of lost focus and interest.  So I decided to continue my journal solely via Instagram for the time being.  If you've been following, you can find me @caiteyacopetti.  I may be back... but for now, so long!

Nursery Inspiration

It's official. I've caught the "nesting" bug.  Over the weekend I suddenly became overly obsessed with nursery decor, paint colors, cute prints... you name it.  So naturally I had to throw together an inspiration board to organize my thoughts.  I'll probably have 100 different ideas before I actually decide on one, but here's what I'm thinking so far. Hopefully it comes together. I don't really want it to be too "theme-y" because I change my mind so much and get sick of things way too quickly.  I'll probably stick to a pretty neutral color palate with random boyish pieces mixed in. I'm pretty much obsessed with this look so far though.

2014 Goals

So I decided no resolutions, just goals this year. Is it just me or do resolutions just sound like they're just bound to be broken? It's kind of a stupid word if you ask me because it just has such a negative connotation. Well, I intend not to break these, so here are some thoughts on goals for 2014.

Read more - I seriously need to spend more time reading and less time watching reality TV.  It's so good and brainless and just what I need sometimes, but such a waste of time.  I'm thinking of starting some sort of book club or something to keep me accountable to this goal.

Find more hobbies - I decided that being passionate about Instagram and shopping on Amazon are not real hobbies, so I want to do better this year. I really want to get to know my camera better. I want to learn all the tricks and settings and hone my manual skills so I can take lots of really great pictures of the little one when he arrives.  I also want to find a few more hobbies to enjoy with my husband and actually do them more often. Like hiking for instance. This area is so beautiful and we need to take advantage of it more often.

Push out a baby - Well this is obvious and inevitable but it's still gonna be a big goal to accomplish. Even though I will be heavily medicated, a human will be coming out of me. And that's pretty cool. Absolutely cannot wait for our little guy to arrive!

Say yes to coffee dates - Sometimes I'm actually busy, and sometimes I just get really socially anxious and make excuses not to meet with friends. Either way, I want work on this and make the time to socialize more. It's been weird moving back to the little town I grew up in, where I know I know so many people, but don't actually have any real friends here.  I have a lot of friends from college in nearby cities too, so no excuses preventing me from hopping in the car and going to meet them either. As much as I love and adore hanging out with my mom, I probably need to hang out with people my age a little more often too.

More date nights - By date nights, I mean actual planned dates. Not just - oh I don't feel like cooking let's go out to some restaurant and grab something to eat. I want to work on this and squeeze as many in before it's not just the two of us anymore. Making time for my hubby is muy importante this year.

Buy a house - We're sort of on our way to this goal already and we should be starting building pretty soon, but I figured I should put this on the list anyway. So excited for this one!

Holiday Wrap Up

Well... it's January 8th and I'm just finally wrapping up the holidays. I suck at blogging. It's been a crazy last couple weeks. The holidays just flew by this year!! I don't know if it was the fact that Thanksgiving was so late, or just how busy we were with parties, but it came and went faster than ever.  And the whole time I kept thinking about how fun it will be next year to have a little baby to celebrate the special time of year with.

We had my family over for a little informal party to kick off the season and here are a few pictures I snapped.  We had a blast and ate soo much food. I seriously love entertaining and I can't wait until next year when we are in a nice large house with plenty of room to have even more people over.

This jalepeno popper pizza is to die for - here's the recipe. I burned the crust a little but it still was a huge hit.

If we were all pregnant at the same time this is what we would look like... hah. Love my sisters.

Bumpdate: 18 Weeks

How far along? 18 weeks
Total weight gain/measurements: +3 (and maybe I should take this portion off bc it could get ugly?)
Maternity clothes: Jeans and a couple sweaters... let's be honest though, mostly in Lululemon about 90% of the time.
Symptoms: Congested but feeling back to normal with energy and appetite!
Sleep: Good! Weird dreams are starting... and I am not needing to get up to pee so often! Whew!
Best moment this week: Feeling the first little kicks! He's been moving a lot when I lay down before bed. So so cool.
Missing: This week sushi sounds really good.
Movement: Yep! Just little flutters - can't wait for them to get bigger so G can feel!
Cravings/Aversions: Craving meat a lot more. Green apples have been a huge craving for a while now. And lemonade. And G finally made me try some chicken and I did ok with it. Although I'm still kind of grossed out by the thought of cooking it. We will see how that goes...
Happy or moody most of the time: Mostly super happy! Occasionally bitchy and not able to bite my tongue.  Oops!
Looking forward to: Finishing up Christmas shopping!

Currently Craving: Meatballs.

I'm starting to really crave meat... I guess boys really need their protein! I'm making these Paleo Meatballs for dinner tonight! They are the BEST!

It's a Boy!

It's true... my guess was right... Baby Yaco is a BOY! We found out a couple weeks ago that he was 95% a boy... and then last week the doc confirmed.  I am sooo excited!!  G is obviously over the moon too.  I'm pretty obsessed with boy clothes and boy nursery decorations so I can't wait to get started on everything! We are so so lucky and can't wait for the little guy to join our fam. Now on to naming... so hard!!

Bumpdate: 15 Weeks

(sorry for the poor quality - I actually took this a few days ago when it was super dark and dreary out.)

How far along? 15 weeks
Total weight gain/measurements: Finally back to exactly what I was pre-pregnancy! We got some growing to do this trimester!
Maternity clothes: YES! I got some maternity jeans from ASOS and I'm obsessed. I might never go back to regular jeans.
Symptoms: Headaches sometimes, still pretty congested.
Sleep: OK... not great... but waking up a little less in the middle of the night which is nice.
Best moment this week: Friendsgiving with some of our favorite people hosted by the amazing Gaby from What's Gaby Cooking
Missing: Wine - might need to really get the non-alcoholic kind.
Movement: Not yet.
Cravings/Aversions: Still can't stand the thought of chicken. Grosses me out to even type the word actually. Yuck. Craving a lot of soup and just got a craving back today for a good juicy hamburger. We had In-N-Out for lunch. Oh and lots of candy cravings still... yikes.
Happy or moody most of the time: Pretty happy. Although little things have set me off and I get really emotional.
Looking forward to: Thankgiving at my parent's house this week!

Currently Craving: Minestrone Soup

So I haven't really had any awesome cravings since being pregnant. My food groups are pretty much carbs, cheese and candy. Anything bland and basic will do. Our house went from having basically zero gluten, grains and dairy to loads of bread, bagels, tortillas, cheese, pizza, etc. A typical day has been english muffin for breakfast, quesadilla for lunch and maybe pizza or a baked potato for dinner. Oh I guess I shouldn't forget the gummy bears or jolly ranchers that make a regular appearance as well. What the heck?! I gotta get back to healthy eating and well balanced meals one of these days.

I was pretty stoked last week when I had a random craving for my favorite minestrone soup from a restaurant near my old college. The only part that sucked was that it's a good 7 hours away. So instead of making my husband drive up there and get it (see I'm not that crazy of a pregnant lady) I decided to try to re-create it. It turned out pretty amazing so I thought I would share what I did.

What You Will Need: 

1 medium yellow onion, diced
3 carrots, diced
4 stalks celery, diced
10 mini red potatoes, diced into pieces similar in size to carrots and celery
3 cloves of garlic, diced
6 cups chicken broth
1 can diced tomatoes
2 tbs tomato paste
1 can cannellini beans
1 can kidney beans
2 cups cooked orecchiette pasta
3 packed cups of fresh spinach
1/2 tsp dried thyme
1 bay leaf
Salt and Pepper


1. Add onion, carrots, celery, thyme and potatoes to a large pot over medium heat. Stir occasionally and sauté until vegetables start to soften and onions appear translucent. 
2. Add garlic and stir for another minute or two but do not let the garlic burn. 
3. Add chicken broth, tomatoes, tomato paste, bay leaf, 1 tbs salt and 1 tsp pepper. Let simmer for 30 minutes or so.
4. Add beans, pasta and spinach and simmer for another 10 minutes.
5. Discard bay leaf and serve!

** If you have leftovers, the soup with thicken a lot - add water or broth to your leftovers and you'll be good as new :)
